How to Keep Your Cake from Melting in Singapore's Heat
You've picked the cake, the candles are ready and the guests are on their way. Then you open the box and the cream is sliding off the side. In Singapore's heat and humidity that can happen faster than you'd think.
Back in 2022 we wrote about the difference between fresh cream and buttercream cakes. We've now updated that post into a full guide: how long each type can stay out of the fridge, when to take it out before serving, how to get it home safely, and what to do when it's delivered to your condo or office.
Fresh cream vs buttercream: why it matters in our weather
Both are made with dairy, and both need the fridge. They just handle heat differently.
Fresh cream cakes
Fresh cream is light, airy and soft, so it's also the first to soften when it gets warm. Our All Time Favourites are made entirely with fresh cream and soft sponge, like the Strawberry Blush, Elegant Fruit Smash and Snowy Blackforest.
Rule of thumb: keep a fresh cream cake in the fridge until just before serving. It tastes best straight from the fridge and should last about 1 hour out of the fridge.
Buttercream cakes
Buttercream is denser and holds its shape better, so it suits tall cakes and decorated designs. Our Signature Ombre, Korean-Style, Photo Cakes and customised cakes have buttercream on the outside, with fresh cream and soft sponge inside.
Rule of thumb: a buttercream cake can stay in a cold air-conditioned room for 2–3 hours. Otherwise, keep it in the fridge.

How long can cake be left out in Singapore?
| Cake type | Out of the fridge | Notes |
|---|---|---|
| Fresh cream | About 1 hour | Serve almost straight from the fridge |
| Buttercream | 2–3 hours in a cold aircon room | Not outdoors or in a warm room |
These times are about texture and keeping the cake looking good. For food safety, a useful guide is the US Department of Agriculture's "2-hour rule": perishable foods shouldn't sit at room temperature for more than 2 hours, or more than 1 hour when it's above 32°C (90°F) (USDA FSIS). On a hot day at a void-deck party or an outdoor BBQ pit, plan for the shorter time.
Fridge tips: storing and serving your cake
- Put it in the fridge as soon as it arrives. Keep it in its box so it doesn't pick up smells or bump into other food.
- Clear a flat shelf before delivery. Check the box will fit, especially for a tall ombre cake (about 5 inches high, according to our cake size guide).
- Fresh cream: take it out right before serving. Light the candles, sing, cut, then put the leftovers back in the fridge.
- Buttercream: take it out 1–2 hours before cutting. Straight from the fridge, buttercream is firm and harder to slice. Give it about 1 hour outside if the room has no aircon, or about 2 hours in an air-conditioned room, so it softens and tastes its best.
- Eat it soon. If kept in the fridge, our cakes are best eaten within 3 days.
Getting your cake home: the car ride
Treat the cake like a passenger, not luggage.
- Turn the aircon on before the cake goes in. A car parked in the sun gets hot inside very quickly.
- Use a flat surface. The floor in front of the passenger seat is usually the flattest, steadiest spot. Seats slope, so the cake can slide.
- Avoid the boot. It has no aircon and gets very hot, and the cake gets thrown around on every bump.
- Drive gently and go straight home. Don't run errands with a cake in the car.
- Put it in the fridge as soon as you get home.
Condo and office deliveries
Most melting happens in the gap between the delivery and the fridge. We deliver island-wide in three time slots: 10am–2pm, 2pm–6pm and 6pm–10pm (delivery FAQ).
- Arrange for someone to receive it. For condos, we usually deliver straight to your unit or to the function room, not to the guardhouse. Please make sure someone is there to receive the cake. If the delivery can't be completed, a redelivery fee applies.
- Chill it straight away. Check the cake, then put it in the fridge right away. If the party is in a function room, keep the cake in an air-conditioned room, which helps it last longer.
- Offices, hotels and chalets: we deliver to the nearest car pick-up or drop-off point, and our driver will call you before arriving. Have someone ready to come down, and know where the pantry fridge is.
- Restaurants: leave the name the table is booked under so we can leave the cake under your name. Ask the restaurant to keep it chilled.
- Need it at a specific time? We can deliver at a specific time for S$40. WhatsApp us to arrange it, so the cake doesn't arrive hours before the party. If you need a cake today, see our same-day delivery page.
Photo cakes and candles
Photo cakes have your image printed in edible ink on an icing sheet, over buttercream. Keep it out of direct sunlight, and keep it chilled until it's time to serve.
A note on fondant
We don't make full fondant cakes. Fondant is only used for some decorations. If your cake has fondant decorations, please remove them before you put the cake in the fridge, because condensation can spoil the fondant.
For candles, have everything ready before the cake leaves the fridge: candles, lighter, knife and plates. Our candles and toppers can go in quickly, so the cake spends less time out of the fridge. Blow them out promptly so wax doesn't drip onto the cream.
Please order at least 3 days ahead, or 5–7 days for customised cakes, so you have time to plan where the cake will be kept on the day. Need one urgently? WhatsApp us at +65 8818 2981 and we'll see what we can do.
FAQ
How long can a fresh cream cake be left out in Singapore?
About 1 hour. Keep it in the fridge until just before serving. For food safety, don't leave perishable food out for more than 2 hours, or more than 1 hour on hot days above 32°C.
Does buttercream cake need to be refrigerated?
Yes, unless it's in a cold air-conditioned room, where it can stay for 2–3 hours. If it has been in the fridge, let it sit for 1–2 hours before cutting so it softens.
How long before serving should I take my cake out of the fridge?
Fresh cream: just before serving. Buttercream: about 1 hour in a room without aircon, or about 2 hours in an air-conditioned room.
Can I leave a cake in the car in Singapore?
No. A parked car heats up fast and the cream will melt. Keep the aircon on, put the cake on a flat surface inside the cabin (not the boot), and go straight home.
How long does birthday cake last in the fridge?
Our cakes are best eaten within 3 days if kept in the fridge.
